Country Choice Chicken










  1. 4Kenchic chicken breasts, boneless and skinless.
  2. 3 spring onions, finely chopped
  3. 1 egg, beaten
  4. 1 cup spinach, chopped roughly
  5. black pepper to taste
  6. vegetable oil for smearing
  7. 1/4 cup breadcrumbs
  8. [4 Slices) Provalone cheese, low-fat
  9. 1/2 tbsp lemon rind, chopped
  10. juice of one lemon
  11. 1 tbsp olive oil


  1. Preheat the oven to 200 degrees Centigrade and grease 0 baking dish with some vegetable oil.
  2. To prepare stuffing: In a small bowl, mixbreod crumbs, spinach, spring onions, lemon rind and egg. To prepare topping: Mix the Lemon iuice, olive oil and black pepper.
  3. Set aside. To prepare chicken: Butterfly (slice open) each chicken breast, being careful not to slice completely through.
  4. Place one slice of Provalone on each open breast.
  5. Place some of the stuffing in each chicken breast.
  6. Fold the chicken breast back together, gently pushing the cheese and stuffing inside.
  7. Place all 4 stuffed chicken breasts into the baking dish.
  8. Whisk topping to ensure well mixed and drizzle over the top of the chicken breasts evenly.
  9. Bake for 40 minutes.
  10. Serves 4.
