Country Choice Chicken


  1. 5 tbsp dark soy sauce
  2. 1 tbsp brown sugar
  3. 1 tbsp rice vinegar
  4. 2 tbsp dry sherry
  5. Juice of an orange
  6. Rind of an orange, finely grated
  7. 1 star anise
  8. 1 tbsp cornflour
  9. 1/4 cup water
  10. 1 tbsp ginger, crushed
  11. 1 tbsp garlic, crushed
  12. 1/2 tsp chilli powder
  13. 24 Country Choice chicken wings. tips removed



  1. Preheat the oven to 200 degrees centigrade then combine the soy sauce, sugar, vinegar, sherry, juice, rind and star anise in a pot.
  2. Bring to a boil on medium heat. Combine the cornflour and water and stir until blended.
  3. Add to the boiling soy mixture stirring well and cooking for a minute while stirring constantly.
  4. Remove from the heat and add in the ginger, garlic and chilli.
  5. Arrange the wings in a single layer in a large oven dish and pour the soy mixture over, stirring to coat the wings evenly.
  6. Bake for 40 minutes until tender and browned, basting occasionally.
  7. Serves 4.
